Inside Joël Robuchon's "Le Bar"

One of the world's top chefs is returning to New York City. After five years away from Manhattan's dining scene, Michelin-star chef Joël Robuchon and business partner Alex Gaudelet of Invest Hospitality have opened L'Atelier de Joël Robuchon. The new location features "Le Bar," which is a 56-seat restaurant intended for a more casual dining experience at a lower price point. Alex Gaudelet, Founder and CEO of Invest Hospitality, says this space applies the DNA of L'Atelier with a New York City vibe. Gaudelet says the trend of "fine-fast-casual" is resonating with people who are much more aware of the quality of food they are consuming. Another restaurateur, Danny Meyer, has pioneered the concept of 'tip-free service' at his Union Square Group restaurant. Meyer includes a service fee in the meal price, and L'Atelier de Joël Robuchon does the same. Gaudelet says this has enabled him to provide more than just a job to his employees by offering benefits and opportunity for growth.
