Millennials are driving demand in plant-based foods products. In fact, nearly 80 percent of the demographic purchases meat alternatives, according to research firm Mintel. That trend is driven by a more health-conscious consumer, and is poised for more future growth as shoppers seek to make plant-based foods a bigger portion of their diet. Almost one third of U.S. millennials say they want to eat more foods from the plant-based category, according to Mintel.
