it's thursday y'all So you know what that means? You're on wake up, it's thursday thursday baker and new. You're excited because today is all about tequila. Yeah, that's right. So joining us to teach us not one but two amazing cocktail recipes. He's brand ambassador for Milagros Tequila, Emmanuel pina. Emmanuel. Good to have you here. Thanks so much for getting up early with us this morning. Thank you for the Emmanuel. I saw you in the kitchen earlier. Getting ready. What is up first? Well, we are doing two cocktails today. We are doing the first cocktails, prickly pear. Uh so it's like the nice prick. And then we're using a uh making like a more savory cocktail with mushroom. Okay, show us how. So we've got alot in this one. Right, yes we have on the first recipe. We're gonna build this one and I need your help. I was a mixologist. Let's do it, darling. There's the ingredients right there for what's gonna be inside. So we're gonna do two parts milagros silver. So we're gonna do right here, I'm just gonna add the ingredients and then you're gonna do nice shape the problem. And then we've got alot, right, yes, I already have combined the aloe and the prickly pear. So I've done uh like some of the job together. So we're gonna it's supposed to be one part aloe and have a prickly pear. So we're gonna fill this one up here. We're gonna and why? By the way is silver sort of suggested for this drink. Can you do reposado. But why in particular? I think silver. It's brighter. It's fresher. And and with these colors that we are doing right now. Uh we're gonna do one part lime juice. Fresh lime juice. Always fresh. Always. Absolutely. Don't ever get the bottles now, by the way, Emmanuel, why does pair always seem to go great with tequila? What is it about that fruit in particular that makes such a good ingredient? I think prickly pear, it's it's like a cousin of the agave agave. It's it's a succulent that grows in the area. It takes around 8 to 10 years to mature the cactus um where the prickly pear grows. Uh it's, you know, from the same arid regions. So like really high concentrated flavors. We're gonna well, let's take this, you guys baker's gonna try it. Yeah, exactly. And this is the drink right up here. Yes. All right. It looks beautiful presentation already. Amazing. You know, it was a mixologist. Right? Yes, exactly. And I had to become a great mixologist during the pandemic. What's our next one though? What baker tries that the next one that is delicious. It's going to be, I'm gonna like by the way, not too sweet, which I really like about that. Yes. So we don't have the pole. Okay, so while you're straining, our next one is actually this is interesting. Our next one is a mushroom cocktail? Oh, a mushroom cocktail. Yes, this one, it's it's really, really interesting. Uh This one. It's it's what I said, it's an homage of Maria Savina, which it was a poet and a shaman from Oaxaca. Uh, and this is what I did was I marinated some porcini mushrooms in the reposado. So like hydrated those mushrooms, getting like all those earthy flavors uh, combined that with sherry, combine that with a little bit of agave and lemon bitters. And by the way for our viewers, there's the ingredients right there. So who is marina Sabino? What is she sort of known for here? She's the queen of mushrooms. She's the queen of mushrooms from Oaxaca. So she was a poet as I mentioned and she was, she's the queen. I went to Oaxaca actually to try tequila. This is delicious. This, you've never had a mushroom sort of drink? No, no. We've had the mushroom coffee. This is delicious. Almost like a cognac. Yes, you're getting a lot of like complex flavors out of this with the lemon bitters, just like making it refreshing. But I think the sherry and the mushrooms and the reposado. Tequila, which is aged for six months. Uh, it's what brings all this. So let's bring Shannon back in here. I want to ask you obviously use the mushrooms for this cocktail, which is amazing. But what do you do with the left open drink. So that's what we got. Something good for him. Well, we use those mushrooms. We chop them and combine them with quick lock. Okay, we quit coach. It's a mushroom that grows in the corn. So we are using uh, meso american flavor. We're using a lot of them flavors from Mexico. So we are using Oaxaca cheese in a corn tortilla. Just top it with a little bit of cilantro and you're getting, I know you don't drink but it was fresh mushrooms and the mushrooms that were actually in the reposado. I cooked them down a little bit but you still have a little bit, a lot of the flavors of the, you've had both drinks, which one so far? This is still my favorite. But the mushroom with tequila with the mushroom left over. I mean you can't go wrong. Alright, thanks of course to Milagro.
