Rainbow Cookies with Zola Bakes

If you're looking for an alternative to cupcakes pies or ice cream this summer. Why not a plate of rainbow cookies? After training in New York City's top bakeries, Samantha Zola opened Zola bakes which specializes in the classic New York City dessert. Samantha. Welcome. Thank you. Thank you for having me. We are so excited to have you now, for anyone who doesn't know what goes into a traditional rainbow cookie. So rainbow cookies are typically almond cake layered with jam and topped with chocolate. Ok. All right. So, um as you show us how to get these cookies iced and ready for tasting. How do you sort of put your own unique classic twist on a lot of these things? Sure. So our cookies um are made with almond cake. They're layered with either apricot jam, raspberry jam, strawberry jam, our particular and it seems like the layers on these are pretty interesting. Yeah, they are, they are. So our special twist is the nutella and we top it with a signature dark chocolate to let you pipe and then um we can do them in different custom colors. We can do different sprinkles to match any occasion or any business you may have, you can hold that. Ok. So you will be doing the piping this thing. Ok. So we fill these bags with some melted chocolate. This is warm chocolate too. By the way, this is warm new chocolate. You can smell it, it smells so good. So as we're doing this, you brought so many different flavors here. Do you have a favorite? So my favorite is the nutella just because it's a little bit different than the classic and I'm a nutella lover. Um Oh yeah, we're snipping the end of our piping the ends. OK. I'm gonna give you this piping bag one. Yeah, and I'm gonna show you guys how we do our signature chocolate drip. OK? The cookies. But if you ever see a rainbow cookie with this type of drip, you know, it's so, so while you do that, I do wanna ask you before you got a professional kitchen, you used to cut thousands of cookies by hand. So how did you manage that in a home kitchen? Because this is a lock. Yes, it was is intense. So I used to have a ruler and I would cut every cookie um the same as A O CD Virgo. I appreciate how everything is the same. It has to be. So how are you doing your, how are you doing this? Are you? So I make it helps make a really good drip along the side. I'm not going as fast as you because I'm really OK. This is coming in and then we go to tap tap, tap, tap and it forms this amazing, amazing drip along the sides and now we can decorate them. That's pretty good. You can do more chocolate and you, you did bring these edible glitter that um me and Baker were very excited about. I'll hand that to you and you also have a special LGBT Q flavor and honor pride. Tell us about that. We do. So we are doing this special Pride box for the month of June and you know, we love our rainbow. So we wanted to add a little extra rainbow. So we did a rainbow drizzle on top in white chocolate. All right, that's the one right there. We're showing our viewers what this looks like. OK, so I'm gonna OK, we're putting this down. Not bad. Ta ta ta ta ta. OK. Now, what am I gonna do? Ok. So now you can decorate them and you've worked some edible glitter on it. You've worked at some of the most famous bakeries here in the city. I, I've less than 2030 seconds. But what's the biggest lesson you've learned, Samantha? So, working in bakeries in the city, it's just very hustle and bustle and busy. So just remembering to focus and do your task at hand and have fun while doing it. What is, what's the verdict? Yeah. Yeah. Indeed, Samantha. Thank you. So much for joining us.
