Candice Hutchings, Youtube star and author of "The Edgy Veg," discusses how the book was inspired by her husband's love of vegan food. Even though her husband is still an omnivore, he has grown to love vegan food because of the comfort-style recipes that she cooks up. Hutchings talks about using foods like seitan and jackfruit that take on similar textures as those of regular meat. We discuss some of the recipes in the book, including comfort foods like pizza and burgers, but also high-end culinary favorites like a veganized steak & béarnaise, pastas, and even a vegan recipe for lox.
